Iko Iko® Cajun Cream Pie

Try this delicious pie for the holidays!

1 Ready-to-use 9 in. pie shell
2 ½ cups milk (scalded)
1/2 cup Iko Iko® (any flavor)
1/2 cup flour
3/4 cup sugar
2 eggs beaten
2 oz. (2 squares) unsweetened baking chocolate, melted
Sweetened whipped cream

In a double boiler, combine 1/2 cup hot milk with flour and sugar. Add the remaining milk and Iko Iko to the mixture and cook, stirring frequently for twenty minutes or until thickened. Stir just a small amount of the hot mixture into the eggs, so as to not cook them. Then combine the egg mixture back into the double boiler. Cook for 2 minutes longer. Remove from heat. Pour half of the filling into the pie shell. Mix the other half with the melted chocolate and layer on top. Chill until ready to serve, then top with sweetened whipped cream.
